Seems obvious; why hasn't this been implemented, or at least warned about in the UI when the woo commerce plugin is installed on a plain wp install?

I agree. It's amateurish having to do it all through tickets and wait for the turnaround. Why can't I see a list of existing mailboxes and create additional ones myself?
