Have an option to spin up server with no applications + sudo access

I think it could be a benefit if there would be an option spin up an empty instance with just the core OS services and files and have sudo access availble for it. That way we can spin up and configure servers to work as smtp relays, reverse proxies, etc.
This could allow more seasoned users to configure a server to do more specific functions not usually applicable to normal use. Also you could leave out the managed service with it since we would be taking on that role with the sudo access.
Not sure how everyone else feels about this, but sometimes I need that and don't want to set up local vm on a legacy system or get a vps / dedicated server somewhere else to do these micro functions.
